Hey kinda late response but if this is still a problem for anyone just open activity monitor find Minecraft launcher and force quit it. This is not a perfect solution but it's better that rebooting your computer everytime you want to play.

If you open an application on Macos, the logo of that application will bounce up and downward a few times before opening. However, with Minecraft, it doesnt even bounce up & down. It won't even open.

Restart your computer.
You can't return the game. However, if you do try to return the video, it will stop the game loading.
This is what happened to me today, too
Mine does the same. I ran Minecraft on my last mac without a problem but I recently got a new one and can't get rid of this issue.
