Indian ice cream Kesar Pista Kulfi


Indian ice cream, or kulfi, is a highly popular treat. It can be produced in a variety of tastes, including mango, malai (cream), kesar (saffron), pista (pistachio), and chikoo (sapota). It has a richer and creamier texture than ice cream.

Where does kulfi come from?

Kulfi is typically made with reduced milk, which is created by boiling milk until it is reduced by one-third, sugar, and flavourings like cardamom and saffron. The three major ingredients in this dish are evaporated milk, heavy cream, and sugar.

Kesar pista kulfi is made with evaporated milk, heavy cream, and sugar as well as additional ingredients like cardamom, saffron, and sliced pistachios.

Condensed milk or cornstarch are not necessary in this recipe, nor is it necessary to boil the milk.

 

How does an ice cream maker make kulfi?

The evaporated milk is added to the sugar in the first stage, which is then whisked to dissolve the sugar. Avoid overwhisking it because kulfi should be dense and we just want a small amount of aeration.

Next, add all of the cream and mix it two or three times. Add flavourings now, such as cardamom for malai kulfi or cardamom, saffron, and sugar for kesar or kesar pista kulfi.

Reserving the addition of ingredients like pistachios or raisins till the very end of the ice cream maker cycle. Before creating the kulfi, let the mixture rest in the refrigerator for about two hours.

Pour the mixture into the canister of the ice cream maker after it has chilled and been thoroughly mixed. If you can manufacture gelato ice cream machine, you should do so because it produces dense ice cream.

How long does it take for kulfi to set?

Before serving, freeze it in kulfi moulds or a container once the cycle has over for 6 to 8 hours. Kulfi should be frozen at around -5 degrees Fahrenheit for an excellent consistency.
