So how exactly does an offset smoker operate? Most offset smokers are comprised of the same firebox as your traditional charcoal smokers; however, there is also an additional bottom cooking chamber, which is designed to be used for smoking hard woods. The main difference is that the smoke box is located on the left side of the firebox. The top cooking chamber is on the right.

Because the firebox is located on the left side of the smoker, it offers the smoker operator more room for movement. This is great for those that want to make quick changes to their smoked food. They can easily flip a switch on the side of their unit to change the fire settings for their smoked meat. Some units even include built in thermometers that show you the temperatures of your cooked food.
